This meal is quick, easy and delicious! Goes great with pasta or rice and requires little work!
Ingredients:
– 1 – 1 1/4lb Shrimp
– 2/3 Cup of Honey
– 2 Tablespoons Minced Garlic ( I use a Jar of Minced Garlic
– 1/2 Cup Soy Sauce
– Olive Oil
OPTIONAL:
– Angel Hair or Rice
– 2 Cups of Broccoli
– Salt
– Sugar
– 1/2 Can of Water Chestnut
– 1/2 Can of Baby Corn
Making this, I only marinated the shrimp for about 15 minutes. You could whip the sauce up and marinate the shrimp earlier in the day to have a even more flavorful & faster meal in the evening.
In a bowl, mix together the Honey, Minced Garlic, and Soy Sauce.
If you want extra sauce for your pasta or rice, use 1.5-2x the ingredients. I personally prefer extra for my Angel Hair.
Pour half of the sauce over the Shrimp in a Tupperware or large ziplock. Shake around to coat all the Shrimp. Seal & Refrigerate for 20 minutes or up to 12 hours.
At this point, after marinating your Shrimp, start boiling water if you are making Pasta or Rice. Add a tablespoon of salt to the water for extra flavor. Then just boil the Noodles as usual for
5-7 minutes to Al Dente.
Evenly coat a large pan with Olive Oil, heat on Medium-High(I put my stovetop at 6-7).
Add in your Shrimp to the Skillet, if you didn’t make extra sauce, pour in the remainder of your sauce. If you made extra, set aside to pour over once plated. Stir frequently, for 4-5 minutes, flipping the shrimps over.
OPTIONAL – Heat a second pan up on Medium, coating again with Olive Oil. Add in 2 pinches of Salt and a pinch of sugar on top of the broccoli. Stir around frequently for 4-5 minutes.
OPTIONAL – For the last minute, add in the half a can of Baby Corn and Water Chestnut. They do not need to actually be thoroughly cooked, just heating them and coating them with the Shrimp.
Toss the Broccoli, Baby Corn, Water Chestnut, and Shrimp together in a bowl, mixing around. Plate your Rice or Pasta, and pour the Shrimp Combo over. If you choose to make extra sauce, pour over to your taste!
Outside of waiting for the Shrimp to Marinate, all of this can be finished & served
within 15 minutes.
