Easy Rocky Road Fudge

While it may be a little time consuming, overall this makes an easy and delectable
Rocky Road Fudge! You can choose to forego the marshmallows and walnuts to make a traditional fudge as well.

– 1 Stick of Butter
– 12 Ounces of Semi-sweet Chocolate Chips
– 2 tsps of Vanilla Extract
– 2 Cups of Sugar
– 2/3 Cup of Evaporated Milk
– 15 Regular Jet Puffed Marshmallows

– 1/4 Cup of Mini Marshmallows
– 1/2 Cup of Walnuts Chopped

Slice your butter into eighths, add into a large mix bowl with the chocolate chips
and vanilla extract. Set aside.

In a skillet, while off, mix together the sugar and evaporated milk. Blend together until smooth.
If you have an electric skillet, use that, otherwise stovetop will suffice.
( I used a stovetop. )

Add in your regular marshmallows to your new sugar blend, heat up and constantly stir on 250F degrees. If you do not have a electric skillet, I set my stovetop to the ” 3 ” setting.
Once the marshmallows are melted in, continue stirring for another 4-5 minutes until the sugar has completely melted and mixture turns a pale tan. Throughout the entire process, scrape the marshmallow residue off the sides back into the mixture.

Turn off your skillet and pour your melted mixture onto your chocolate chips, butter, and vanilla extract. Stir hard until the chocolate chips and butter have mixed in thoroughly.
OPTIONAL: If you are making Rocky Road Fudge, add in your walnuts and mini marshmallows now. Stir in constantly for 2-3 minutes.

Pour your fudge mixture into a 7×11″ baking dish.
: Line the baking dish with parchment paper for a much easier time serving.
Optional: Poke in mini marshmallows and walnuts on the top.

Cover your fudge, and let it set in the refrigerator for at least 3 hours.
Trim off your excess parchment paper for an easier time saran-wrapping.

There you have your homemade Rocky Road Fudge( or regular fudge).
Entire process takes about 25-30 minutes of working time. It is worth every second as this recipe turned out delicious!
