This is a quick and easy sauce with a plethora of uses! Great on pasta, breads, pizzas and for dipping! Quick to store for a delicious meal or snack later as well!
Ingredients:
– 2 Cups of Fresh Basil
– 3 Tsp of Minced Garlic
– 1/4 Cup of Pine Nuts
– 2/3 Cup Extra Virgin Olive Oil, Divided
– 1 Tsp of Kosher Salt ( or to your taste)
– 1 Tsp of Black Pepper ( or to your taste)
– 1/3 Cup of Grated Parmesan
1. ) Add the basil, garlic and pine nuts into your food processor and pulse until
coarsely chopped.
2.) Add in 1/2 cup of the olive oil and process until combined and smooth.
Add in your Salt and Pepper.
If you are storing it for later use, you can stop here.
Place it in an air tight seal, drizzle the remainder of the olive oil on and store it(can freeze for up to 3 months). Finish the remainder when you’re ready to serve, just thaw and stir in the grated parmesan.
3.) Pour in the remainder of your olive oil and pulse until smooth.
4.) Transfer to a mixing bowl, add and stir in your grated parmesan!
This pesto comes out great always, and basically impossible to do wrong outside of measurements. My children all love it with their Angel Hair, and the ol’ lady loves it with buttery French Bread.
Chicken Angel Hair with this pesto and some Artichokes & Olives is amazing, especially with a little bit of fresh bacon bits added on.
